Go Back Appetizers Egg Salad Squash Wrap INGREDIENTS: 1 large yellow squash 4 large hard boiled eggs peeled 2 tbsp mayonnaise 1 tsp mustard Salt and pepper to taste Romaine lettuce (optional) DIRECTIONS: Make sheets from the squash according to VASTA instructions and cut into four 9" long pieces. Chop eggs and mix with salt, pepper, mayonnaise and mustard. Lay sheets out on a flat surface or cutting board and divide egg mixture evenly between the squash sheets. Roll each one tightly.
